TIRAMISU
Tiramisu is a popular Italian dessert that is sinfully satisfying.
Preparation time: 20 minutes
Freezing time: 2 hours
Serves: 4
Ingredients:
• 4 egg yolks
• 60 g caster sugar
• 320 mascarpone cream cheese
• 120 ml cream
• 60 ml coffee (strong)
• 20 ml brandy
• 25 Savoiardi biscuits (or use sponge fingers)
• 2 tbsp cocoa powder
Steps to prepare:
1. Beat the yolks with half of the sugar, until it forms a smooth mixture. Add the mascarpone cream cheese and mix well.
2. Beat the cream with the remaining sugar till fluffy. Then gently fold into the mascarpone mixture, folding it in delicately with a spatula. Take care to not let it deflate.
3. Prepare the coffee. Add brandy when still hot.
4. Once cool, soak the Savoiardi biscuits (or sponge fingers) in it.
5. Divide half of the mascarpone cream into four martini glasses. Top with the soaked sponge fingers, and finish with the remaining mascarpone cream.
6. Cover with cling film and refrigerate for two hours.
7. Serve, with cocoa powder sprinkled over the top. |

MUSHROOM AND CHEESE COCA PIZZA
Mushroom and cheese coca pizza is a Spanish version of pizza. This recipe is simple and delicious.
Preparation time: 20 minutes
Resting time: 60 minutes
Cooking time: 20 minutes
Serves: 4
For the pizza crust (Or use 4 ready pizza bread roundels)
• 500 g flour
• 2 tsp yeast
• 2 tsp sugar
• 2 tsp salt
• 80 ml olive oil plus 20 ml to brush on top
• 250 ml warm water
For the topping
• 1 tbsp olive oil
• 2 spring onions, chopped
• ½ tsp chopped garlic
• 150 g mushrooms, sliced
• Salt and pepper, to taste
• 3 tbsp grated
• Parmesan cheese
• A few sprigs thyme
To assemble
• 100 ml tomato puree
• 60 g mozzarella cheese, grated
To make the pizza crust
1. Combine all ingredients in a bowl. Knead to smooth dough, and set aside for 30 minutes.
2. Divide dough into five portions and flatten each into five-inch circle. Arrange on butter paper and set aside for 30 minutes. Brush the tops liberally with olive oil.
To make the topping
1. Heat oil in a pan and sauté the spring onions and garlic. Add mushrooms and sauté further. Season with salt and pepper, and once cool, stir in the Parmesan cheese and thyme.
To assemble
1. Place the oiled side of the dough discs on the grill and cook until the grill leaves an impression and the dough starts turning lightly crisp on the sides. Liberally coat the uncooked side with oil.
2. Remove from grill and arrange on buttered paper again with the grilled side facing up. Warm the tomato puree and spread a spoonful of it on each disc.
3. Sprinkle mozzarella and some of the mushroom topping over the top.
4. Return to the grill, keeping the oiled and uncooked side down. Cook for five minutes. Serve hot. |

CHURROS
Originated in Spain, Churros is a crisp, deep-fried, vanilla-infused dessert rolled in sugar and cinnamon.
Preparation time: 10 minutes
Cooking time: 10 minutes
Serves: 4
Ingredients:
* 200 ml water
* 2 tbsp brown sugar
* ½ tsp salt
* 65 g butter
* 200 g flour
* 2 eggs
* ½ tsp vanilla extract
* 300 ml oil
* 50 g sugar
* ½ tsp cinnamon power
Steps to prepare:
1. Put water, brown sugar, salt and butter in a pan, and bring to boil.
2. Remove from heat. Add the flour, and stir continuously, till very well blended.
3. Whisk the eggs and vanilla together, and add to the flour mixture.
4. Heat the oil in a shallow frying pan. Fill a frosting bag with a large star-shaped nozzle. Squeeze a small amount of dough into the oil test to it. The dough should bubble up right away, or the oil isn’t hot enough.
5. Squeeze dough strips, about four inches long into the hot oil. Cook till golden brown.
6. Remove the churros from the oil and place on paper napkins to drain excess oil.
7. Mix sugar and cinnamon powder and spread on a dish. While churros are still warm and cinnamon mixture to coat.
8. Serve with a cup of hot chocolate. |

CHAR-GRILLED ZUCCHINI & COTTAGE CHEESE SKEWERS
Preparation time: 15 minutes
Marination time: 4 hours
Cooking time: 15 minutes
Serves: 4
For the marinade· 3 tbsp mustard
· 3 tbsp grain mustard
· 1 tbsp tomato paste
· ½ tsp garlic paste
· 1 tsp chili paste
· 6 tbsp olive oil
· Salt and pepper to taste
· 2 zucchinis, peeled and sliced
· 300 g paneer, cubed
· 2 onions, quartered and segmented
For garnish
* 1 tsp chopped parsley
* 1 tbsp melted butter, to serve
Steps to prepare
1. To make the marinade, mix the mustards, tomato paste, garlic paste, chili paste, olive oil, salt and pepper.
2. Marinate zucchini, paneer and onions for four hours.
3. Alternatively, thread on soaked bamboo or metal skewers.
4. Grill on moderate heat, until it leaves grill impressions on the vegetables. Then move the food to a low heat zone or oven roast for 15 minutes.
5. Sprinkle chopped parsley and drizzle melted butter over the skewers and serve hot. |

DAL FRY
Dal Fry is a very popular recipe and is the perfect accompaniment for rice and roti. It is easy to prepare and extremely delicious.
Preparation time: 10 minutes
Soaking time: 30 minutes
Cooking time: 25 minutes
Serves: 4
Ingredients:
• 100 g toor dal
• 200 ml water
• 3 tbsp oil
• 1 tsp chopped garlic
• 1 tsp chopped ginger
• 150 g chopped onion
• ½ tsp cumin seeds
• 1 tsp chopped green chilies
• 100 g tomatoes, chopped
• ¼ tsp turmeric powder
• ½ tsp chili powder
• Salt, to taste
• 50 g coriander leaves, chopped, to garnish
Steps to prepare
1. Wash the dal until water runs clear. Soak in 200 ml water for 30 minutes and pressure cook for 15 minutes.
2. Heat the oil in a saucepan. Add the chopped garlic, ginger, onion, cumin seeds and green chilies.
3. Fry the condiments on medium heat for 5 minutes, keep stirring periodically.
4. Add the chopped tomatoes, turmeric powder, chili powder and salt. Fry again on high flame for about 3 minutes.
5. Pour this mixture into the dal and mix thoroughly. Garnish with chopped coriander leaves and serve hot. |

RICE KHEER
Rice Kheer is a classic Indian desert. This delicious desert is simple and quick to prepare.
Preparation time: 20 minutes
Cooking time: 25 minutes
Serves: 4
Ingredients:
• 50 g long grain rice, washed and drained
• 1 litre milk
• 3 cardamoms, powdered
• 2 tsp almonds, blanched and slivered
• A pinch of saffron soaked in a little hot milk
• 1 tbsp pistachios, skinned and chopped
• 1 tbsp raisins
• 3 tbsp sugar
Steps to prepare
1. Put the rice, milk and cardamom powder in a pan. Bring to a boil and simmer gently until the rice is cooked.
2. Add the almonds, saffron, pistachios and raisins. Simmer for about 4 minutes.
3. Add the sugar and stir until completely dissolved.
4. Remove the rice kheer from heat, and serve either warm or chilled, garnish with chopped almonds and pistachios. |

PASTA PRIMAVERA
Pasta Primavera is an Italian-American dish that consists of pasta and fresh vegetables.
Preparation time: 15 minutes
Cooking time: 25 minutes
Serves: 4
Ingredients:
• 320 g penne
• 4 tbsp olive oil
• 8 flakes garlic, chopped
• 50 g onion, chopped fine
• 160 g zucchini (in Hindi Tori or Turaii) washed and cubed
• 160 g red and yellow bell peppers, cubed
• 2 tsp chopped red chilies
• Salt and pepper, to taste
• 80 g sweet corn
• 80 ml tomato puree
• 320 g cherry tomatoes, halved
• 80 g Parmesan cheese, grated
• 12 basil leaves, torn
Steps to prepare
1. Cook pasta in a pot of salted boiling water, with a tablespoon of oil, until al dente. Drain and set aside. Retain the water for adjusting consistency of the sauce.
2. Heat the remaining oil in another pan, and lightly brown the garlic and onion.
3. Add the zucchini and bell peppers, chopped red chilies, and salt and pepper. Let the vegetables cook for another five minutes, before adding the sweet corn and tomato puree. Cook for two minutes, making sure that the sauce does not dry up. If it does, add some of the cooking water kept aside.
4. Add the cherry tomatoes and stir in the Parmesan and basil.
5. Serve pasta with basil and a drizzle of olive oil. |

Fruit & Jelly Salad
Servings: 2, Time Taken: 15-30 mins
Ingredients:
1 cup - yoghurt
1½ cup - milk
1 cup - orange juice
1½ cup – melon pieces
1½ cup – papaya pieces
2 to 3 tbsp - sugar
1½ tbsp - gelatin powder
1 tbsp - water
1 tbsp - lemon juice
Method:
Soften the gelatin in water for 5 minutes. Add sugar to milk and heat it. Add the gelatin to this mixture. When the gelatin is dissolved, add yoghurt and mix well. Pour the mixture into a tray and refrigerate. Take some melon, papaya and place them in a parfait glass. Cut the jelly into bite-size cubes and place a few in the glass. Mix orange juice and lemon juice and pour on top. |

Coffee Jelly
Servings: 2, Time Taken: 15-30 mins
Ingredients:
4 tbsp - sugar
4 cups - water
4 tbsp - coffee
To decorate:
4 tbsp - cream, grated chocolate
Method:-
1. First chill the containers. Melt the sugar in 1 cup of the water and bring to boil.
2. Sprinkle the gelatin over the boiling water and remove from the heat.
3. Stir until the gelatin has dissolved.
4. Stir well and pour into bowls. Chill.
5. Decorate with double cream and if you like grated chocolate |

Swiss Roll Sandwiches
Servings : 2, Time Taken : 15-30 mins
Ingredients:
1 packet - sliced bread
200 gms - boiled potatoes
2 tbsp - milk
2 tbsp - tomato sauce
1 tbsp - butter
2 to 3 - drops red colour
For Green Chutney:
1 - onion
1/2 - lemon
coriander leaves
1 piece - ginger
1 tsp - sugar
1 tsp - jeera
3 to 4 - green chilies
5 to 6 - groundnuts
green colour
salt to taste
Method
1. Grind to a paste all ingredients for green chutney and keep aside.
2. Boil potatoes and mash while still hot.
3. Add salt, pepper, sauce and milk into the mashed potatoes then and mix well.
4. Add colour and keep aside.
5. Roll each bread slice with rolling pin.
6. Apply water at one end of each bread slice and join 2 slices together.
7. Apply butter on half the number of bread slices and spread mashed potatoes over them.
8. Apply butter and chutney on the remaining slices.
9. First roll slice covered with potatoes.
10. Over this roll a slice covered with chutney.
11. In this way prepare all the rolls.
12. Wrap all rolls in a plastic and keep in refrigerator for 4 hrs at least.
13. When firm, cut into round rings and arrange in a plate |

Mock Bread Pizza
Servings: 2, Time Taken: 15-30 mins
Ingredients:
6 slices - plain white bread
1 - small capsicum, chopped
1 - small onion, chopped finely
1 - small tomato, chopped finely
2 tbsp - suji
3 tbsp - milk cream (malai)
salt and pepper to taste
Method
1. Mix all the ingredients except the bread in a bowl.
2. Let the mixture stay for about 5 minutes.
3. Put a nonstick tawa/pan on flame.
4. Start applying mixture on one side of the bread slices.
5. Place that side of the slice first on which the mixture is applied in the pan.
6. Once cooked properly turn the side and let it get crisp.
7. Now serve immediately with sauce. |

Cream of Vegetable Soup

Ingredients:
6 - carrots
2 - onions
1 - large potato
1½ tsp. - Fresh cream
1½ cup - milk

Method
1. Cut the vegetables into big pieces.
2. Add 6 cups of water. Boil till the vegetables are tender.
3. When cooked blend the mixture and strain.
4. Boil for 15 minutes.
5. When ready add cream, milk, salt and pepper. |

Veg Club Sandwich

Ingredients:
4 slices of white bread
2 slices of cheese
200 gm of besan or gram flour
1 green chilly
A pinch of salt
2 tomatoes chopped fine
1 chopped onion
few pieces of chopped coriander leaves
2 tomato slices
2 cucumber slices
2 onion slices
200 gm of any green chutney
1 tsp red chili powder
oil for frying
butter to spread on bread
Method
1. Mix chopped Tomatoes, Onion, Coriander Leaves, Gram Flour, Red Chili Powder and Salt together and prepare a batter.
2. Shallow fry into a Vegetarian Tomato Omelet.
3. Spread butter on Bread Slices and apply some Green Chutney.
4. Place the Veg. Omelet between two slices of bread and also Tomato, Cucumber, Onion, & Cheese Slices. |
